Developed by co-founder and veteran bartender Pablo Moix, it was purpose-built as a cocktail rye with the backbone for Manhattans, Old Fashioneds, and Boulevardiers, though it drinks beautifully neat. Blended from high-rye Kentucky barrels, including some older than the stated age. Expect tart lime, clove, and sweet caramel on the nose, spearmint, caramel, and building rye spice on the palate, and a long finish of white pepper, mild char, and lingering sweetness.
